Even though I write about food for a living, when someone invites me to a potluck, my mind always goes blank. What should I bring? What will the host appreciate most? What will the guests love? What is food??? Fortunately, I have a few backpocket recipes that are fail-safe crowd pleasers, including this easy-peasy refried bean dip. Fortunately, I usually have all of the ingredients on hand, just in case a potluck invite comes out of nowhere.
Ingredients
Nonstick Cooking Spray
1 16oz Can Refried Beans
1 Teaspoon Cumin
1 Teaspoon Chili Powder
1 Teaspoon Paprika
1 Teaspoon Garlic Powder
1 Cup Shredded Cheddar Cheese
4 oz Cream Cheese, Softened
1 cup Mateo's Cantina Salsa
Garnish
½ Red Onion, Diced
¼ Cup Cilantro, Chopped
To Serve
¼ Tortilla Chips
Instructions

Preheat oven to 350 °F. Spray an 8” x 8” casserole dish with nonstick cooking spray. Combine all remaining ingredients, and mix thoroughly. Pour refried bean mixture into the prepared casserole dish and bake, uncovered for 25 minutes. Allow to cool for 5 minutes, top with diced red onion and chopped cilantro, and serve with tortilla chips.
